Wedding Cake

This was our wedding cake! This was a custom designed by Lisa Allan of "About Cakes and Catering" in Martindale, Texas. She was wonderful! We had a consultation and she made the cake to coordinate with my dress and gave me so many helpful tips for the type of wedding we were having. The taste of the cake (from that one little bit I got at our wedding) was delicious!! Now as tradition goes the couple freezes the bride's cake top tier to eat on their first anniversary. I looked this up and this tradition goes waaaay back! Not everyone does this, but we wanted to for the fun of seeing if it would still be good after a year!

As you have read, we were in NYC for our one year anniversary, therefore did not get to eat our cake! Well now that we are back in ATX for no particular reason I decided this week, 14.5 months later, to defrost the "foil wrapped thing" that has been in our freezer for so long. I let it defrost on the counter for one day and then in the fridge for another day. And voila:

Now Lisa was at our wedding to set up the cake and to box it up after the wedding. (well worth the extra $25 for the box up fee!) So after removing layers and layers of foil and then layers and layers of plastic wrap the cake appeared!! I had to remove the ribbon that was still on it and chunks of hard frosting came off of it too. Then we cut it:

We each had a bite:

The results: DELICIOUS!! Seriously it was still really good!! I was nervous, but we loved it (again)! The cake part itself seemed dense and a little dry, but other than that it tasted great!! And there is still some in the fridge....hmmm snack time!
