Foodie Friday

TGIF and a three day weekend! Woohoo!

Breakfast
8:00am- Its a common occurrence that I crave breakfast tacos. So that is what I had this morning...
Egg, black bean, refried beans, chia, cheese and hot sauce with grapes and coffee

Snack
11:00am-  We played at the indoor playground at church this morning. I went ahead and packed the kids a lunch and myself a snack.
I had all intentions of eating this snack...but Parker wanted the banana. I snacked on the almonds but was then attacked by kids who I shared with.

Lunch
12:45- Y'all might sense a theme here...but it was left over from dinner a few nights ago.
Two chicken, lime and beans tacos!

Dinner
6:00pm- Sadly I forgot to snap a picture! I made broccoli and cheese quinoa and served it with chicken and apples.

I know a few of you are thinking "omg, you didn't have shakeology today!!??"  I know, I know I thought the same thing! I was going to have it for lunch. We got home too late and I felt SO hungry and wanted chewable food instead of a shake. No probs, there is always tomorrow :)

Until next foodie Friday!

Foodie Friday

It's Friday and its time for long overdue Foodie Friday post!

Breakfast:
8:15- I normally have a shakeology shake for breakfast. But today I decided against the norm (and the kids were playing which gave me time) and made a hot breakfast for myself.
It's a stuffed taco! Quinoa, onions, egg, tomatoes, cilantro, lime, salsa and chalula hot sauce

Snack:
11am- we were playing/swimming outside. And I cut up a bowl of fruit but the kids ate most of it!
Strawberries and oranges

Lunch:
12:30pm- I recently received the newest flavor of shakeology. Vanilla!!! Y'all this is even better than the chocolate! It's leading in my favorite flavor! I love the flavor and that Im getting a mega dose of superfoods, vitamins and its taste goood!  I made a new recipe for lunch.
Vanilla shakeology, 4 strawberries, 1/2cup blueberries, 1tbsp PB, 1.5cups almond milk and ice!

Snack
4pm- Kids wanted a snack after their nap so I decided I should have one to avoid getting hangry before dinner.
Carrots and Hummus

Dinner
6:30pm- I've been wanting to try a new a recipe on Pinterest, it involves eggplant but for some weird reason I couldn't find it at our normal walmart grocery store. So we travelled to my favorite HEB to find said eggplant.
Eggplant pizza! It turned out better than I thought it would! I want to make it again and try adding pepperoni.

Dessert
9pm- Had a frozen yogurt run with some girlfriends.
A little bit of everything and it was delicous!

Until next Foodie Friday!!

Foodie Friday

Happy first day of summer everyone! We had a rather short night for this long day ahead of us. The kids usually sleep soundly from about 7:30pm-6:30ish am. But last night both were having trouble with being congested and overall were up and down a lot.

Breakfast
8am- I was wanting a filling and warm breakfast this morning.
Bell pepper, avacado, toast with shredded cheese, an over easy egg with chalula (sooo good) and a cup of coffee!

Snack
10:30am- I had been wanting to try this muffin recipe earlier this week but couldn't find the time. So while the kids watched their new favorite show (The Magic School Bus), I baked!
Quinoa Pumpkin Muffins! I mostly followed the recipe...I just added a little bit of chocolate chips and chia seeds! These are so yummy!

Lunch
12:30- Shakeology Time!!
Chocolate shakeology, 1.5 cup milk, 3 strawberries, 1 tbsp peanut butter and ice! (Violet loves PB spoons!)

Snack
3:45- while driving to the grocery store with my no napping kids, I grabbed a string cheese and pretzels (not pictured) so I could keep my sanity

Dinner
6:00pm- My friend Nikki had passed along a recipe for Black Bean Burgers awhile back. I finally got the ingredients and was excited to make these from scratch! Super easy! Just have to remember to allow time to freeze them for 2 hours prior to cooking.

Mmmm! Strawberries, grapes, corn and a black bean burgers with crunchy onions!

Dessert
9:30pm- Bryson brought this home from work
A huge tiramisu from Buca di Beppo! It was delicous!

Untile next foodie Friday!

Foodie Friday

Today I remembered its Foodie Friday! Did you?

Breakfast
7:30am- Today was a little less stressful to make breakfast. I just started some scrambled eggs right away. We played a little first and then Violet was saying "I'm hungry can i eat breakfast please"

Kids had fruit and eggs with cheese
I had a chocolate shakeology shake (not pictured)

Lunch
11:50am- my parents came over as I was seeing the kids their lunch. My dad went to get he rest of us Subway

Kids had fish sticks, sweet potatoes and fruit

I had a spicy Italian sanwhiches with all toppings except cucumbers, jalapeƱo chips and a sweet tea! My sandwich combines with the chips left my mouth feeling so spicy! Yum!!

Dinner
6:30- Our friend Ryan was coming to dinner and I had already bought the ingredients for dinner before I knew he was coming. It was a new recipe from Pinterest and I was nervous about how it was going to turn out. Well this dinner did not disappoint! Violet ate soooo much and kept asking "can I have more meat? I want more meat please!"

French Onion baked pork chops, baked sweet potato and broccoli. (I can't wait to eat the leftovers tomorrow!!)

Until next foodie Friday!

Foodie Friday

Totally forgot about Foodie Friday until right before lunch so here you go!

Lunch
1:07- I threw this together while the kids played after their lunch

Pasta stir fry- noodles, broccoli, mushrooms, tomatoes, onions, garlic, peas, carrots, chia seeds, sriracha, soy sauce and teriyaki

Y'all I was so stuffed!! It was really filling and my mouth was burning due to my common overload of sriracha.

Dinner
6:15- Bryson went to Maggiano's for lunch and brought home fettuccine Alfredo leftovers. I on the other hand had already prepped overnight oatmeal. I had been craving something cold and sweet but nutritious.

Bryson and the kids- Fettuccine Alfredo, broccoli, olives and grapes

Me- peanut butter and chocolate overnight oats (I know looks a little nasty from the pic! I only let it sit in the fridge for 30 mins when usually you let it sit "overnight")
