Foodie Friday

TGIF and a three day weekend! Woohoo!

Breakfast
8:00am- Its a common occurrence that I crave breakfast tacos. So that is what I had this morning...
Egg, black bean, refried beans, chia, cheese and hot sauce with grapes and coffee

Snack
11:00am-  We played at the indoor playground at church this morning. I went ahead and packed the kids a lunch and myself a snack.
I had all intentions of eating this snack...but Parker wanted the banana. I snacked on the almonds but was then attacked by kids who I shared with.

Lunch
12:45- Y'all might sense a theme here...but it was left over from dinner a few nights ago.
Two chicken, lime and beans tacos!

Dinner
6:00pm- Sadly I forgot to snap a picture! I made broccoli and cheese quinoa and served it with chicken and apples.

I know a few of you are thinking "omg, you didn't have shakeology today!!??"  I know, I know I thought the same thing! I was going to have it for lunch. We got home too late and I felt SO hungry and wanted chewable food instead of a shake. No probs, there is always tomorrow :)

Until next foodie Friday!

School Days

Yep. The time has come. Violet started preschool a few weeks ago! We never did a mother day out program, she has been my little side kick for three and a half years! A week before school started I was pretty sad about her being gone 2 mornings a week. But she is a little smarty pants and needed more time to be challenged and learn. She was very excited for her first day of school!

We all walked her to her class room and she literally walked in and sat with the other kids on the carpet and waved bye! So we knew she would be fine!

Violet LOVES school! When I pick her up she is exhausted and asks to go night night as soon as we get home. She takes art, music, library and Spanish while at school. She gives us bits and pieces everyday of what she is learning.

I actually didn't cry like I thought I would after taking her to school. The second day I was a little teary. I know she is having fun and is safe, I just missed her. Now it's fine. I just had to get use to her being gone. Parker and I usually run errands, play at home or go do something fun together. It's nice to actually have alone time with him. He is really chatty when is big sister isn't around.

I've really been enjoying making lunches for school....but that will have to be another post :)

Colorado Trip

The first week of August we traveled to Colorado. This was our first flight with  all 4 of us (Parker's first, Violets's third). We did a lot of planning and buying a few new toys. Overall they did great! Parker got very fidgety at the end of the flight and fell asleep for the last 20mins.

My parents lived two blocks from each other when they were in high school. All of my aunts and uncles and cousins live in Colorado (except 2) so we stay pretty busy and have two reunions while we are there. Also since my grandparents lived 2 blocks from each other my aunts and uncles on both sides grew up together too. So it's not uncommon to have dinner at my maternal aunts house and have fraternal aunts and uncles there. Hope that's not too confusing!

We did a lot but, I'll highlight a few:

Cheyenne mountain zoo: I haven't been to this zoo in years! But now since there are a lot of little cousins we thought we would make a trip! It's a beautiful zoo set on the mountain side!
All the little cousins

The giraffe and elephant exhibits were my favorite. You can literally pet the giraffes! It was so cool but also very frightening bc they are huge! The elephants are viewed from a hanging bridge you cross over. Tr view of Colorado Springs is beautiful. We had a great time and had an even better nap afterwards.
Too close!

Grandma:
My grandma recently moved into a nursing home so this was the main reason to visit. It was sad to see her not in her home, but she seems okay and is enjoying the activities at the nursing home. She is so sweet and loved watching the kids play in her room. She loves spicy shrimp chips and apparently so does Parker!
Sharing snacks

Cousins:
Every summer growing up we would spend 1-2 weeks in Colorado. My sister and I always had so much fun with our cousins. We would have lemonade stands, walk to the Quick for a milkshake, cartwheels in the front yard... Now that we are older is wish we lived closer to them...bc they are still so much fun to be around! We were able to have a girls only "lady joy" hot tub party at the hotel my aunt was staying at.
This is a sister-cousin-niece-aunts picture!

Weather:
It was absolutely gorgeous while were there! And it was a pleasant change from the hot Texas heat. We spent a lot of our time in Colorado outside and didn't sweat! It was wonderful! It rained the last two days we were there and we needed a light jacket. It hailed while we were having a BBQ at my aunts house and tr kids loved playing in the ice after it stopped!
Hail!

Overall we had a great trip! It was a little hard/exhausting with two kids (chasing them around, short conversations and they caught a coughing cold). But I'm very thankful we were able to be with family and enjoyed making memories with each other! Hope to make it next year!

Flight home to Texas!

Foodie Friday

It's Friday and its time for long overdue Foodie Friday post!

Breakfast:
8:15- I normally have a shakeology shake for breakfast. But today I decided against the norm (and the kids were playing which gave me time) and made a hot breakfast for myself.
It's a stuffed taco! Quinoa, onions, egg, tomatoes, cilantro, lime, salsa and chalula hot sauce

Snack:
11am- we were playing/swimming outside. And I cut up a bowl of fruit but the kids ate most of it!
Strawberries and oranges

Lunch:
12:30pm- I recently received the newest flavor of shakeology. Vanilla!!! Y'all this is even better than the chocolate! It's leading in my favorite flavor! I love the flavor and that Im getting a mega dose of superfoods, vitamins and its taste goood!  I made a new recipe for lunch.
Vanilla shakeology, 4 strawberries, 1/2cup blueberries, 1tbsp PB, 1.5cups almond milk and ice!

Snack
4pm- Kids wanted a snack after their nap so I decided I should have one to avoid getting hangry before dinner.
Carrots and Hummus

Dinner
6:30pm- I've been wanting to try a new a recipe on Pinterest, it involves eggplant but for some weird reason I couldn't find it at our normal walmart grocery store. So we travelled to my favorite HEB to find said eggplant.
Eggplant pizza! It turned out better than I thought it would! I want to make it again and try adding pepperoni.

Dessert
9pm- Had a frozen yogurt run with some girlfriends.
A little bit of everything and it was delicous!

Until next Foodie Friday!!
