Show me whatcha workin with!

I was in charge of dinner tonight and didn't remember until about 4pm...so I went to have a look see to find out if I needed to go to the store. And I'm so glad I didn't have too!! We had pork chops, canned pineapple, bell peppers and onions and this is the magic it turned in to:

Super Super Easy Impromptu Dinner! These items are things that we just had in the fridge/pantry and it worked! If you want to try this here ya go:
Ingredients:
3 pork chops
1 garlic clove
1/2 onion, sliced
small can of diced pineapple
olive oil
brown sugar
yellow and orange bell peppers, sliced
**"Rooster Sauce" or Sriracha Sauce for spice

Heat skillet and add about 2tbsp olive oil. Add crushed garlic and onions, stir around for about 5 mins. Add pork chops and can of pineapple w/juice. Place heat on low, cover and let simmer for 15 mins or until pork is cooked. (Flip pork every 5 mins or so) At this time there will be a lot of liquid in the pan. Take off lid and increase heat until boiling to reduce liquid. Once liquid starts to reduce sprinkle brown sugar on both sides of pork and flip until slightly browned. Serve over rice

In another pan, heat, add 2tbsp of olive oil and add bell peppers. Stir fry for about 10 mins. I still like them a little crispy, just heated.

The results: So good! The pineapple added a nice sweetness to it with the brown sugar taste! And the pork was very moist and tender. Probably from simmer in all the liquid. Also the bell peppers were a nice combo with the pork. I forgot how much we like bell peppers! Totally making this again! :) We cleaned our plates!

I promise one day I'll blog about breakfast and lunch.
