Often times lunch is rushed, leftover dinner or something easy to make. I'm not one to diss easy Mac, chicken nuggets, fish sticks, fruit snacks, etc! Trust me I feed my kids those, but often feel a little guilty. There are better healthier, fresher options!
Today (thanks to Parker taking a nap) I was able to make a fresh lunch for me and the kids! Super easy and yummy! Baked Onion and bread crumb chicken tenders, stove cooked sweet potatoes "French fries" and avocado!
