Foodie Friday

Happy first day of summer everyone! We had a rather short night for this long day ahead of us. The kids usually sleep soundly from about 7:30pm-6:30ish am. But last night both were having trouble with being congested and overall were up and down a lot. 

Breakfast 
8am- I was wanting a filling and warm breakfast this morning. 
Bell pepper, avacado, toast with shredded cheese, an over easy egg with chalula (sooo good) and a cup of coffee! 

Snack
10:30am- I had been wanting to try this muffin recipe earlier this week but couldn't find the time. So while the kids watched their new favorite show (The Magic School Bus), I baked! 
Quinoa Pumpkin Muffins! I mostly followed the recipe...I just added a little bit of chocolate chips and chia seeds! These are so yummy! 

Lunch 
12:30- Shakeology Time!! 
Chocolate shakeology, 1.5 cup milk, 3 strawberries, 1 tbsp peanut butter and ice! (Violet loves PB spoons!) 

Snack
3:45- while driving to the grocery store with my no napping kids, I grabbed a string cheese and pretzels (not pictured) so I could keep my sanity

Dinner
6:00pm- My friend Nikki had passed along a recipe for Black Bean Burgers awhile back. I finally got the ingredients and was excited to make these from scratch! Super easy! Just have to remember to allow time to freeze them for 2 hours prior to cooking. 

Mmmm! Strawberries, grapes, corn and a black bean burgers with crunchy onions! 

Dessert
9:30pm- Bryson brought this home from work 
A huge tiramisu from Buca di Beppo! It was delicous!
